Gluten & Grain Free Bavarian Boiled Soft Pretzels

If you have never made homemade soft pretzels and you enjoy baking- you MUST give them a try!! It is so fun watching them puff up in the boiling water and then turn a beautiful golden brown color in the oven. The first bite of a fresh homemade pretzel coming out of the oven cannot be beat!!

I created this recipe for my cookbook Every Last Crumb which is sadly out of print now! I had to bring back these soft pretzels to live permanently online! It would be a shame for anyone to miss out on the change to make them.

Despite being Gluten, Grain. Egg, Nut & Dairy Free- the texture & flavor of these pretzels cant be beat!!

Grain free Bavarian Pretzels

Grain free Bavarian Pretzels

Ingredients

Yeast Mixture
  • Yeast Mixture
  • 1 ¾ cup Lukewarm Water (416g)
  • 1 TBSP Sugar
  • 1 ½ tsp. Yeast
Pretzel Dough
  • 1 packed cup Coconut Flour (129g)
  • 1 packed cup Potato Starch or Sweet Potato Starch (162g)
  • 1 packed cup Tapioca Starch (132g)
  • ½ tsp. Kosher Salt
  • 1 ½ tsp. Xanthan or guar gum
  • 2 1/2 tsp. Baking Powder
  • 5 TBSP Shortening (60g)
  • 2 TBSP Potato Flour
  • 1 TBSP Honey (21g)
  • Coarse Sea Salt

Instructions

  1. Preheat oven to 375 degrees.
  2. In a measuring bowl combine lukewarm water, sugar and yeast; set aside.
  3. In a mixing bowl, combine the coconut flour, potato starch, tapioca starch, salt, xanthan, baking powder, shortening, potato flour, and honey.
  4. Add in yeast mixture.
  5. Coat your hands in oil and divide dough into 6-8 equal sized balls. Gently roll each ball on a dry surface at least 12 inches long. Criss cross each rope into the classic pretzel shape.
  6. Place on a parchment lined baking sheet, brush with oil and cover with a towel. Place in the warmed oven and turn off. Leave a crack open for 20-25 minutes. This is to allow the pretzels to rise.
  7. Preheat oven to 375 degrees. Brush pretzels with oil and top with coarse sea salt. Bake for 24-26 minutes.
