Creamy Butternut Squash Chicken & Gnocchi

Practical recipes is the name of the game over here at BakingAngell.com While I LOVE creating elaborate recipes too- simple really is best. Simple is what I cook the most- and I’m sure its the same situation in your home.

This recipe is serious comfort food & If you want it can all be made in one pot! Finding gluten free gnocchi in the grocery store kind of blew my mind. Typically I make my own from scratch but having it ready to go to throw into anything was an exciting thought. Since then I have been working on a few recipes using them.

This one turned out great- I LOVE anything with wine in it. The butternut squash flavor is subtle but good. You’ll end up with perfectly cooked tender & juicy chicken with a rich sauce bursting with good flavor - with chewy gnocchi. It may be a simple week night meal but it tastes more like date night food to me!

Lately I have enjoyed the idea of just throwing dried pasta right into the pot with its sauce. Doing this works great - it just requires a lower starch pasta (as in not a bean pasta or the brand tinkyada joy). As long as the pasta is covered fully in the sauce it will cook through. Sometimes adding it can thicken the sauce and in that case I just add a bit more chicken broth.

We made the recipe dairy free- using silks dairy free heavy whipping cream. Its the absolute closest thing I have found to heavy cream for recipes. By FAR. However I know it’s not always the easiest to find and the next best option would be the creamy part of coconut milk from a can. But if you come across silks version stock up!! Its amazing- especially made into whipped cream!

I recently discovered trader joe’s bagged & grated vegan parmesan cheese! Its pretty legit. If you can get your hands on some of that for this recipe that would be ideal. Close second runner up options are follow your heart vegan parmesan or violife’s vegan block of parmesan!

Of course real cream and regular parmesan will work great too!

If you are Grain Free or Paleo check out Jovials Cassava Pasta. You can add it right to the pan or of course cook it on the side!

I found a great deal on gnocchi on amazon. In stores (at least around me) when I can find it - its close to $10 a lb. This 6 pack is closer to $5 per package/pound and It lasts a long time. (https://amzn.to/3lMdWO4)

The directions on the package say that it cooks in just a few minutes. While yes this is true- I would recommend giving it a good boil for 7-8 minutes. It has a little bit of a sour flavor to it that goes away is you cook it long enough.

While you can technically throw the raw gnocchi into the sauce - for this brand in particular (and maybe others too- I haven’t tried them to know.) I think they just taste best boiled in water first.

Notes:

While we used gluten free gnocchi & it was delicious you can absolutely use any pasta you wish. It can be cooked on the side and stirred in OR you can throw it right into the pan with the sauce. I just recommend using a non bean pasta as the bean ones release a ton of starch. Tinkyada joy does too- which is not ideal for the sauce- it will get too thick. You can of course still use these pasta types- I just suggest cooking them in their own pot.


If you want the sauce thinner you can add more chicken broth or cream.


*For dairy free we used Silk's Dairy Free Heavy Whipping Cream! Full fat coconut cream would work as well.
