One Pot Creamy Gluten Free Vegan Mac & Cheese.

I have worked for years to create dairy free options but things got more serious for me when I developed a dairy allergy in early 2020. Since then I have been absolutely determined to figure out the best possible options.

When I had the idea to create a one pot version it had to happen. You cook the pasta right in the cheese sauce.

We LOVE Mac and cheese around the holidays - it would feel wrong to not have it. So I’ve been messing around with this recipe for a year and half until I got it just right.

If you enjoy the flavor of nutritional yeast then this gluten free vegan Mac and cheese is for you! I have found that combining nutritional yeast with mushroom powder is a magical combination and really gets you pretty dang close to getting that cheesy flavor!! The mushroom powder is essential. Don’t skip it. It’s truly what sets this recipe apart from others.

I will soon be experimenting with a corn flake top baked version as well! Stay tuned for that!

You can use any shape of pasta that you want but I’m partial to shells for Mac & cheese. I typically buy the gluten free shells from jovial.

To make Grain Free & Paleo:

Swap out the gluten free all purpose flour for 1 tbsp of starch (tapioca or potato) + 3 tbsp of cassava flour.

This recipe makes a pretty big batch - feel free to cut it in half of serving to a smaller family.

Notes:

If you want to add the turmeric for a nutrition and color boost- please note that as it cooks it will make the mac & cheese get darker & will progressively change the color.


As this mac and cheese cools it will thicken- if you want to thin out the sauce when reheating you can whisk in more coconut milk, water or broth!
