Gluten & Dairy Free One pot creamy white wine chicken & pasta

I created this recipe for a ticktok video and it quickly went viral! Its been made and loved by MANY. I have made a wide assortment of one pot meals and I have to say that this one is my absolute favorite. The flavor is so comforting!

This creamy dairy free dish is incredibly easy to throw together on a week night but has the flavor of a dish that spent hours being prepared. Its one of those one pot meals that I find myself coming back to over and over!


What makes this gluten & dairy free One pot creamy white wine chicken & pasta so good?

The complexity and depth of flavor that the wine adds to this dish is incredible! However it doesn’t overpower the dish as the creaminess from the coconut cream creates a wonderful balance! If you dislike the flavor of coconut don’t worry- you won’t taste it whatsoever in this dish!

If you prefer using heavy cream or half and half feel free to use that in the place of the coconut cream!

To Make this Recipe Grain Free:

Opt for grain free pasta! Jovial now makes a variety of grain free dried pasta’ shapes made with cassava flour!

To make this recipe Paleo:

Use a grain free pasta (such a jovial) and use the coconut cream option! For the butter you can use whatever butter you prefer!

To Make this Recipe Vegan:

Skip the chicken altogether. Opt for the dairy free options - vegan butter and coconut cream! Swap out the chicken brother for your favorite vegetable broth. I personally love all the organic better than bouillon flavors- including their veggie base!

Chicken Thighs: For this recipe you can use bone in or boneless!

Garlic Powder: Any brand of garlic powder is just fine.

Himalayan Salt: This is my go to salt for all cooking & baking - feel free to use whatever you’ve got. Keeping in mind that each variety may have a bit more or less saltiness pending the size it is ground.

Black Pepper: Any black pepper will do!

Salted Butter (Regular or Dairy Free) for this you can use any brand. My preference for vegan are the brands melt or earth balance.

Yellow Onion: if you don’t have a yellow onion a white one will also work.

Garlic Cloves: Fresh garlic really adds to the flavor of this dish! It’s worth taking the time to chop up.

Rosemary: fresh or dried will work equally well

Dry White Wine: Don’t stress over buying any expensive bottle here! A $10 or less dry white wine is perfectly good. Just make sure it’s NOT sweet!

Chicken Broth: my favorite brand is better than bouillon- their organic line is dairy free and has clean ingredients. Feel free however to use whatever brand you want!

Coconut Cream or Heavy Cream: whenever using coconut cream- make sure just to skim the creamy part off of the top of the can! It’s best to chill the can first to make this easier. Targets blue can of coconut milk is my favorite and has the most coconut cream I have ever seen in a can! As for the heavy cream- you can use regular OR more recently silk has released a dairy free heavy cream sub that is excellent! It would work great in this recipe.

Dry Pasta: I recommend sticking with a grain or cassava based pasta rather than a bean based pasta. The bean pastas release a lot more starch and their flavor can throw off this recipe. We love the Whole Foods brand gluten free rigatoni for this recipe- or any of the jovial gluten free pastas are great.

Gluten free Tinkyada pastas release more starch than most brands so I would recommend not using it for this recipe.

If you are not gluten free regular pasta will work too!

How to make Gluten & Dairy Free One pot creamy white wine chicken & pasta

Using a 5 quart brassier or a 5 quart frying pan with a lid melt the 2 tbsp of butter and season the chicken with garlic, salt, and pepper.

  1. Add the chicken to the pan and sear for about 6 minutes on each side. Remove the chicken.

  2. Add the remaining butter and onions, cooking until golden.

  3. Add the garlic, spices and cook for 3-5 minutes.

  4. Pour in the wine, cream, and broth. Bring to a boil, add the chicken back and the pasta.

  5. Cover the pan and cook until the pasta is cooked and the sauce thickens.

Tips & tricks to make the gluten & dairy free One pot creamy white wine chicken & pasta

Be cautious not to overcook the pasta! I recommend removing the pot from heat just before the pasta is finished as it will continue to cook from the heat of the pan!

Don’t stress over making sure the chicken is completely cooked before adding the next set of ingredients. It will finish cooking with the pasta when the lid is on the pan.
