Thai Peanut Whole Roasted Cauliflower

Earlier this year I was in a funny little gap with my business. I knew I needed to change things up with my blog but wasn’t fully sure of the direction I wanted to go- so I spent a month or two created content exclusively for TikTok & Reels to see where it took me.

After that I made the decision to build a whole new website, bring back club Angell and then time willing would bring back some TikTok/reel content. I loved creating those videos and plan to do it again ASAP- but I found people really wanted a website to default to for the recipe - so I started back from the ground up.

This is one of the recipes I created in that time frame and it went VIRAL. To my amazement I watched it get 330,000 views in a matter of days. Tons of people made the recipe and messaged me saying they loved it.

So it’s been on my to do list to make it again to take photos and to officially post it on the blog.

It really is so flipping good & EASY. So So easy. It can be a main dish or a side dish.
the recipe usually has some extra sauce when all is said and done and that works perfectly slathered on chicken, mixed into a pasta dish or even used as salad dressing.

Every summer on the regular I make a double batch of this sauce and douse it all over chicken and chopped up cauliflower & grill them both. The key is to brush the sauce on before, a few times while grilling and again at the very end. If you want to give this a try put foil in a grill plan and then use that for the cauliflower!

You may have noticed I tagged this recipe with a ton of different diets/allergies. At first glance may seem like I’m totally off left field. But I promise you this recipe is HIGHLY customizable. Let’s talk about how to make this for different diets.

Paleo: use a creamy sunbutter or almond butter instead of peanuts. Use coconut aminos instead of soy sauce.

Keto & or Sugar Free : Use a sugar free syrup. My favorite is Sukrin Gold & a no sugar added creamy peanut butter.

Vegan: Use agave syrup.

Gluten free: just make sure your soy sauce is GF.

Nut free: Use Sunbutter instead of peanut butter.

A quick note on sugar free sweeteners. I have tried out a bunch. These are the best options:

The Nature’s Hollow brand can cause a little bit of digestive upset for some people, but not everyone. The other three are really gentle on your stomach. All of the brands will work great in this recipe. You may use sugar free honey OR maple syrup for this recipe.

Depending on the size of your cauliflower you may end up with some extra sauce! This sauce is DELISH and can be used for a number of things. We also like to put it on grilled or roasted chicken. It can also be tossed with rice noodles for a peanut noodle dish, or if you thin it out with a little more oil it works great as salad dressing! It can be stored in the fridge for up to one week. If it thickens after sitting in the fridge warm it up and give it a stir.
